Zesty, Creamy and Egg-Free: A Brain-Boosting Lemon Avocado Mousse Recipe

Made with ripe avocado and fresh lemon, this after-dinner treat is packed with nutrients that are essential for overall healthy aging, but especially for women going through perimenopause or wanting to support their hormonal health. It might sound a little questionable if you haven’t used avocado in baking before, but the bright and tangy lemon zest compliments the rich, creamy avocado and coconut oil so well for a refreshing, vibrant springtime dish!
Avocados can be found year-round, but in the late winter and spring, you can find some fresher and tastier Haas avocados for all your recipe needs (plus better for the environment!). This fruit (yes, a fruit!) provides our egg-free mousse with unbeatable creaminess and a ton of hormonal balancing benefits. Plus, you get all of the avocado’s diverse nutritional goodness!
A single cup of avocado provides around 10 grams of dietary fiber and almost 25% of your daily recommended Vitamin C, alongside a lot of potassium, magnesium, Vitamin B6, and Vitamin E. So many essential nutrients, minerals, healthy fats, and fiber are found in avocados but they’re especially rich in bioactive compounds including carotenoids and phenolic compounds which are specifically known for their neuro- and cardioprotective properties.
These powerful antioxidants, lutein, α-Carotene, and β-Carotene, help protect against oxidation damage that can be a result of many chronic conditions and inflammation, to help combat skin changes you’ve been experiencing recently. A study of 45 people who ate one avocado a day daily had more of the carotenoid lutein in their blood than those on a typical Western diet not eating avocados. Getting a diet rich in healthy fats and antioxidants is essential to optimize your brain function, maintain hormonal balance, and support overall mental well-being, especially during periods of hormonal shifts and may help ease common symptoms you’ve been experiencing.

Lemon Avocado Mousse
Here’s what you’ll need:
1 large ripe avocado
Juse and zest of 1 lemon
1 TBSP coconut oil, melted
2 TBSP plain yogurt
Food processor
Here's how to make it:
Blitz all ingredients together in a food processor until creamy and smooth.
Divide into dishes and chill for 30 minutes before serving.
